For all the holidays coming up in both Canada and the United States try something truly North American, bison meat.
Barbecue Bison Burgers
What better way to celebrate Father's Day, Canada Day, American Independence Day, National Aboriginal Day (June 21 in Canada), the Summer Solstice or Summer than with barbecue bison burgers. It's a truly North American meat.
Bison or American Buffalo populations after facing extinction in the nineteenth century are coming back to the Canadian Prairie. They are no longer an endangered species and are now raised on ranches as well as in protected parks and just recently out on the open range. Many specialty butcher stores stock buffalo meat and you can buy it over the Internet. I bought ground buffalo meat from my local butcher. They got it from a ranch in Alberta.
It's leaner and yet sweeter, meatier than ground beef. According the United States Department of Agriculture it has one- third the fat and half the calories of beef.
Mix all ingredients together. Form balls and press into patties. Barbecue on a low heat or put it on the grill just when the coals are dying. Low and slow. Be careful to cook all the way through; don't over cook. Turn till they brown on both sides. Eat them just the way they are- no need for any sauce or condiments.
Instead of buns, leave room on the grill for bannock - campfire bread .
