Have a baked spinach omelet to start your day. My mother's recipe.

According to my last poll , breakfast was your favorite meal.

There is an amazing variety of breakfasts all over the world. Soups in Africa, steak and eggs in the Australian outback, kippers and scones in Scotland, pancakes in North America and Scandinavia but the best breakfasts are the ones with fresh in season fruit and vegetables.

Strawberries are just now starting to come in, in many places. They are perfect for anytime of the day, they are a nutritional powerhouse of vitamin A and C. Try them with plain yogurt or in a salad with baby spinach.

For a fast nutritious breakfast try a fruit drink.

Speaking of spinach here's my mother's spinach baked omelet recipe. Its great for breakfast but it also makes a great side dish for dinner.

Spinach Baked Omelet

Turn oven on to 350 F

Sauté white onions until golden brown. Prepare spinach and green onions.

Beat eggs until fluffy.

Mix all the onions, spinach, green onions and spices into the eggs.

Pour it into a lightly greased pie pan.

Bake for 15 or 20 minutes until solid in the middle.
