Cooking over an open fire is one of the joys of camping. This camp meal is easy to prepare and roasted over campfire embers.
Are you looking for a special meal prepared over the open fire when you're camping? This recipe is easy to prepare and will become a traditional favorite.
Recipe Ingredients:
Roll of tin foil
1 pound of ground chuck, sirloin, or hamburger
2 cups cut carrots
2 cups diced pototoes
1 cup diced yellow or white onions
salt and pepper to taste
Recipe Directions:
First, you must prepare a proper fire and let it burn until you have an abundance of hot coals.
Crumple newspaper as the base to start the fire and lay in fire pit
Add twigs and leaves on top of newspaper. Taking care not to add to many leaves, or you will get a lot of smoke that may smother the fire.
Carefully arrange larger sticks in a teepee fashion around the newspaper, twigs and leaves
Ignite fire and make sure all twigs and sticks are burning well
Carefully add larger twigs to the burning teepee structure, taking care not to burn yourself!
After approximately 10 to 15 minutes you will be able to add larger logs to the fire
Let fire burn and accumlate hot embers.
While you are waiting for the fire to accumulate embers, you can prepare the foil packets
Foil Packets for Embers:
Tear off 5 to 8 two foot long sections of foil. Fold two foot long sections in half, making one foot long pieces of foil.
Crumble ground chuck, sirloin, or hamburger into each foil section, dividing the meat equally into each section
Add approximately 1/4 to 1/2 cup of carrots and potatoes to each section of foil
Add onions to each section of foil, distributing equally among all sections
Add salt and pepper to each foil packet
Close each foil packet by folding over and securing the edges, making sure there are no holes in the packets
Lay foil packets carefully in fire embers
Bake packets on embers for approximately 15 to 25 minutes, depending on how hot the coals are
Packets are done when meat is thoroughly brown, and when potatoes and carrots are soft. Prick potatoes and carrots with fork to determine softness
Take care when removing packets from embers, they will be extremely hot! A metal spatual works best for removal.
Serve individual packets on a tin or crockery camp plate. This camp dinner can be eaten right out of the foil packet.
These foil packets serve approximately 5 to 8 people.
Variations on Foil Packets:
Try ground sausage instead of ground chuck, sirloin, or hamburger
Use barbecue sause as a seasoning in packets
Use cut up smoked sausage in place of ground chuck, sirloin or hamburger
