Cauliflower and Broccoli Salad

A Low Calorie, Low Carb Winter Meal or Appetizer

Try cauliflower and broccoli salad instead of potato salad for a change and for less calories and carbs.

A Winter salad and great start to your diet. Its both low carb and low calorie if you use low fat mayonaise or/and sour cream. Personally I like the combination of both.

Its a good idea to start this salad the night before.

CAULIFLOWER AND BROCCOLI SALAD

  • Juice of half a lime
  • 1 small red onion
  • 1 head firm Cauliflower
  • 1 head broccoli tops
  • ½ cup parsley
  • 1 green onion
  • 1 cup low fat sour cream or mayonnaise or combination of both.
  • Salt and pepper to taste

Chop red onion. Sock onion in limejuice and then put in small plastic container for at least one hour or over night.

Discard cauliflower and broccoli tough ends. Steam both until tender but still firm. Let cool.

Chop parsley and green onions. I cut them with scissors.

Mix all the vegetables, parsley, and onions together, then the lemon and limejuice. Sprinkle lemon zest on top. Sprinkle salt and pepper to taste. Mix in sour cream. Refrigerate for at least one hour.
