Do you want a nourishing light dinner or lunch that you can make from your left over bits and pieces? The chicken pasta salad is it.
This is a good way to use up that left over chicken and use what you have in your fridge. Just remember left over meat should always be in the refrigerator and never around for more than two days. Please read Summer Food Safety While you can use any part of the chicken, the white meat works best. To me curry and chicken always go together but there's no reason why you can't use the spice you like best like chili.

Boil pasta in a large pot. Right after it's done, still firm but cooked through, drain, and pour cold water over it so it won't expand. Drain again to get out all the excess water. Chop the chicken.
