Do you want a nourishing light dinner or lunch that you can make from your left over bits and pieces? The chicken pasta salad is it.
This is a good way to use up that left over chicken and use what you have in your fridge. Just remember left over meat should always be in the refrigerator and never around for more than two days. Please read Summer Food Safety While you can use any part of the chicken, the white meat works best.
To me curry and chicken always go together but there's no reason why you can't use the spice you like best like chili.
1 cup cooked chicken breast
1 ½ cups mayonnaise.
1 cup pasta. Small spiral, elbow, or bow tie works best.

3 or 3 gherkins or chopped dill pickles
1/3 cup lima beans
Look in your fridge and see what you can find!
Boil pasta in a large pot. Right after it's done, still firm but cooked through, drain, and pour cold water over it so it won't expand. Drain again to get out all the excess water.
Chop the chicken. On a separate board chop, celery and romaine lettuce. Slice, or cut I use scissors the green onions.
You have two choices:
1. Mix the chicken up with the celery, corn, and lima beans if desired and green onions adding mayonnaise and curry powder. Set aside. Chop the lettuce and put on the bottom of the serving dish. Then put the pasta on top of the lettuce. Place the chicken mixture on top of everything. Garnish with parsley and cashews if desired.
Mix everything together, you might need more mayonnaise and a bit more curry.
