Perfect for Serving on Groundhog Day, These No-Bake Treats With Chocolate, Almonds, and Coconut Can Be Made in Minutes!
If you're celebrating Groundhog Day on February 2nd, Chocolate Groundhog Cookies are perfect to serve for dessert. These cookies, which resemble groundhogs (if you use your imagination, of course), are ideal for anyone who is too busy to cook, since they require no cooking (except a short 1 1/2 minutes in the microwave to melt the chocolate) or baking at all!
Since these fun cookies are very fast and easy, kids of all ages may be included in the preparation. Older children who are allowed to use the microwave by themselves can prepare them with little or no adult help.
Serve these Chocolate Groundhog Cookies with ice cream or pudding for dessert following a favorite “ground hog” (pork) dish on Groundhog Day such as Slow Cooker Italian Sausage with Peppers and Onions. Just add a nice salad and this memorable Groundhog Celebration meal will be complete!
Chocolate Groundhog Cookies
Makes about 48 cookies
1/2 cup semi-sweet chocolate chips
1 14 oz. can sweetened condensed milk
1 teaspoon almond extract
1/2 cup sliced almonds, coarsely chopped
14 ounces chocolate sandwich cookies (such as Oreo), finely crushed
2 cups coconut, (approximately)
semi-sweet chocolate chips, for eyes
Melt the 1/2 cup semi-sweet chocolate chips in a large microwaveable bowl.
Stir in the sweetened condensed milk and almond extract.
Mix in the almonds and sandwich cookies, stirring well until thoroughly mixed.
Scoop teaspoonfuls of the mixture and roll in the coconut.
Place on a parchment-lined sheet and flatten slightly.
Press two chocolate chips, point side down, into the cookies for eyes.
Note: These cookies may be kept for weeks in an airtight container at room temperature.
Hints to Speed up Preparation:
The food processor makes quick work of the chocolate cookie crumbs; alternatively, the chocolate sandwich cookies may be placed in a sealed Ziploc bag and crushed with a rolling pin. If you don’t have a small scoop, the mixture may be formed into balls before rolling in the coconut; this will take slightly longer, but will still provide excellent results.
