Easter Feast for Two

Stephen is a history buff, and loves watching the History Channel or reading anything historical. He likes to dabble in watercolors, and sometimes draws and paints cartoons.

Nicole is a published children's fantasy writer and poet. Both like to putter around the garden, play hockey with their cat and are enthusiastic cooks.

What do you have for your Easter Dinner?

Stephen likes serving Scalloped Potatoes, and I like my mixture of Wild Rice and Short Grain Brown Rice, so we've been alternating each year. We also have a cooked green vegetable or a nice tossed salad with the meal. Dessert remains a surprise each year, and Stephen prefers something traditionally with chocolate!

Here is Stephen's Raisin Sauce recipe that he uses for the ham at Easter:

Combine all ingredients, except brown sugar, cornstarch, allspice and salt, in a saucepan; bring to a boil. Add the rest of the ingredients and stir into orange mixture. Cook and stir until its thick and bubbly. Serve warm with cooked ham. Makes about 1 1/2 cups.

Here's Nicole's recipe for:

Maple Glazed Carrots with Tarragon

Boil one and a half cups of baby carrots in a saucepan. Once they are fork tender, drain the water from saucepan. Stir in 1 teaspoon of butter or margarine, 2 tablespoons of real maple syrup and 2 teaspoons of dried tarragon. Serve.

Note: This recipe is easily doubled if there are more guests.

What does Easter mean to you?

Easter is family time, a coming together and a celebration of spring. If I go up to Nanaimo to see my parents and my cousin, sometimes I'll with my cousin to Church. This year, our shift schedules have both Stephen and myself working from Good Friday through Easter Monday. We will try to have our own quiet Easter dinner. And we may visit my parents in Nanaimo on the Thursday before Good Friday to have a small get-together. Sometimes, Stephen's mother invite us over to her place for a special McGregor family gathering. We'll be playing it by ear this year.

Stephen and I love cooking together on special occasions; ie: Christmas, Thanksgiving, family summer Bar B-Q's, etc. In my opinion, Stephen is the far better cook. However, Stephen feels I make better homemade soups.
