Here's my Interview with her.What does Christmas mean to you?Christmas is a holiday that means more to the extended family than anything else. We spend Christmas making the rounds of the relatives, going as far as Ohio, Massachusetts and South Carolina from New Hampshire, depending on the year. It gives us a chance to reconnect with our family that we wouldn't otherwise have. The holiday is not important to my honey and I at all but family is, so Christmas is how we keep in touch with an ever spreadingfamily. What makes Key Lime Pie Special?I got it from Mom, who got it from Nana, who got it from something at some point in the 1950s, and it has served three generations well so far. Homesick for the South? Just need a fast but difficult looking dessert for your upcoming Christmas dinner? Whatever the need, this incredibly fast and simple Key Lime Pie recipe looks and tastes like the "real thing" (meaning the more time-consuming and complex version). This version of Key Lime Pie has become a staple at our holiday gatherings, both at home and when making the rounds of the family dinners. It is by far my most requested dessert, beating even the homemade Apple Pie, Pecan Pie and 8-Layer Chocolate Sin Cake in popularity. That is actually a good thing, since I also usually bring several other dishes for the pot luck as well and this is a real time-saver.... Describe this pie?This pie can be either pale yellow or lime green in color. The actual homemade Key Lime Pie in any version is actually a pale yellow color, though most restaurants add food coloring to give it a green tint. If you feel your family or guests will not try something that they don't recognize and wish to give it color, add 2 drops of green food coloring to your batter just before pouring into the pie crust, otherwise, leave it the original color. The texture should be fluffy and creamy, and give you the sensation of having a bittersweet lime actually melt on your tongue. If it is not made correctly, it will feel heavy in your mouth, or worse, slightly crunchy. Believe me, a crunchy cream based pie is not a good thing! The crust should complement the texture of the pie. You can use either a graham cracker crust, which is not traditional, or a baked dough pie crust, which is traditional. The graham cracker crust makes the pie a doubly sweet confection without adding unnecessary crispness. The baked pie dough crust gives you a base for your pie without adding any sweetness at all, and is the crust I usually use for this dessert. The flavor should be a perfectly balanced combination of the tartness of the Key Lime juice (Yes, the kind of lime makes a large difference in the taste of the pie) and the sweetness of the condensed milk used in this recipe (the more complex recipe uses a home made egg custard as is base, instead of the condensed milk short cut used here). The crust should remain unobtrusive and not interfere with the balance of flavors at all. A burnt crust will ruin this pie's taste. Pie Details:Preparation Time: 15 minutes to make, 6 hours to set Servings: Serves 4 greedy people, or 8 polite people.... Salmonella risks from egg yolks not being cooked: none - the acid in the lime juice serves as the cooking agent for the egg yolks - just don't lick the spoon in this recipe!The Deceptively Simple Key Lime Pie Recipe Utensils

The Incredibly Easy Pie Assembly Putting It All Together Bake pie crust per package instructions, set aside to cool for 15 minutes Beat lightly with whisk in mixing bowl: Condensed milk, egg yolks, lime juice (food coloring if you must go there) Pour lightly beaten ingredients into the cooked pie crust Cover assembled pie with vented tinfoil or vented plastic lid that comes with some pie crusts Refrigerate assembled pie for 6 hours, minimum Remove set pie from refrigerator, spread layer of nondiary whip over top of pie and decorate with patterns of swirls if desired Serve to awe-struck dinner guests (sprinkling flour on face and claiming it took you all day to bake like certain commercials for other Quick Desert products is optional at this point) More about Leslie:Other Christmas links: If you'd like to write a guest article for Seasonal Cooking please email Devorah Stone
