I take much effort each year to buy the perfect rib roast. However, one memorable Christmas a couple of years ago, two rib roasts had to be purchased when I left the rib roast in the freezer at my house in Charleston, SC prior to driving to Orlando, FL to spend the holidays. I remembered I forgot the roast right about the time I drove through Savannah, GA - too late to turn back. There was a mad rush to the nearest Publix grocery store on Christmas Eve to buy a replacement rib roast and actually it was one of the better roasts in recent memory.
Standing rib roast with Yorkshire pudding has been a Christmas Day tradition in the Loughran family for as long as all living family members can remember. There have been years when the pudding refused to rise or the rib roast was over done or horrifyingly not done enough. Reminiscing about meal mishaps in the past has also become a tradition as the family gathers around the table each year to celebrate the birth of Christ and remember beloved family members that are no longer present.
It is crucial that you use beef drippings from roast beef or some sort of broiled beef.
Preheat the oven to 450 F.
Pour your beef drippings into a 11 x 7 pan.
Combine all the remaining ingredients in a bowl and mix thoroughly until you have no lumps.
Stir constantly while slowly adding the contents of the bowl to the beef drippings until the mixture is well blended.
Bake for 25 to 30 minutes until the pudding has risen and serve immediately.
