A true North American classic! Chicken at a picnic!

Is there anything better than chicken at a picnic? Chicken more than any other meat are ready made for picnics especially drumsticks. You don't need a knife and fork to eat them.

There's thousands of ways to make chicken. Just about anything you can imagine go with chicken. I like orange and or lemon zest on my chickens. My family love Soya and Teriyaki sauce on theirs. It's just about personal taste. Finding a chicken recipe that tastes good cold is a bit of challenge the flavors need to be bigger.

The crushed corn flakes seal in the flavor. And make it easier and less messier to hold with your hands.

This is everyone's favorite picnic chicken around here:

Oven Baked Picnic Chicken

  • 1 cup ground corn flakes
  • 8 pieces of chicken legs
  • 8 fresh basil leaves
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • Zest from one small lemon
  • 1 Tablespoon Soya Sauce
  • ½ Balsamic vinegar

Marinate chicken in balsamic vinegar and Soya Sauce in the refrigerator for at least one hour.

Preheat oven at 350 degrees F. Place a fresh basil leaf on each leg, sprinkle legs with oregano, thyme and cumin and lemon zest. Crush the corn flakes in either a Cuisenaire or with a rolling pin. Coat chicken in the corn flakes. Place on uncovered in shallow, lightly-greased tray. Turn over when brown. Cook until done; about 30 minutes on each side. Makes eight servings.
