A Winter’s Meal: Sweet and Sour Chuck with cabbage.

Here's one of my family favorites that will keep you warm on stormy cold days. Its one of these slow cooking meals and its aroma permeates the entire house.

Here's a recipe for a chuck roast, that works. It does a few hours but it will warm everyone in the house and get you through the dark cold days. Its a twist on a winter brisket meal.

Sweet and Sour Chuck

The Marinating sauce

In a small bowl mix together:

Place sauce over chuck steaks. Place in plastic bag for two hours or overnight.

Preparation:

Step A:

Preheat oven at 275F

  1. Fry onions in oil until light golden brown. Place in roasting pan.
  2. Place marinated chuck steaks on top of the onions, spread ketchup over the steaks, spread tomato sauce over the ketchup.
  3. Cover with tinfoil, place in heated oven for 3-4 hours until meat is tender when pierced with a fork.
  4. Remove the meat. Cut into 2" - 3" pieces. Place meat back in pan.

Step B:

Preheat oven to 300 F

  1. Cut up cabbage in large pieces.
  2. Place in pot. Cover cabbage with water and 1tsp salt. Bring to a boil on high heat. Drain.
  3. Put the cabbage into the pan with meat. Mix together.
  4. Cover and bake 45 minutes.
  5. Finish by baking uncovered for 15 minutes.
  6. Remove and serve with rice or noodles.
