The Comfort of Cold Soup: Gazpacho

If hot soup is great on cold days then cold soup hits the spot on lazy hot summer days.

Here's a great recipe from my friend, writer and poet Gillean Chase for Gazpacho soup.

Our group, four women writers meet about twice every month for food and writing. Last week it was Gillean's turn. We were delighted to have a cold soup waiting for us. It's just right with a good piece of rustic bread, a bit of cheese and salad makes a perfect lunch or brunch.

It takes 20 to 30 minutes to prepare but at least 2 hours to chill. You can prepare it the night before.

  • 4 c. V8 juice
  • 1 small minced onion
  • 2c. diced tomatoes
  • 1 c minced green pepper
  • 1 diced cucumber
  • 1 clove garlic
  • 2 scallions chopped
  • juice of 1/2 lemon and 1 lime
  • 2 T wine vinegar
  • 1 tsp each of tarragon and basil or fresh ground cilantro
  • dash of ground cumin
  • 1/4 c. chopped parsley
  • a sprinkle of hot pepper seeds
  • 2 T olive oil
  • salt and pepper to taste
