Turkey and Vegetable Recipes for LeftoversCreative meals for leftover turkey with vegetables.
Thanksgiving is the best part of autumn.. Next to Christmas, Thanksgiving is the second most anticipated meal of the year.
The majority of families, however, who planned and cooked that wonderful supper will be the same folks who will be wondering what on earth they are going to do with all the leftovers. How many turkey sandwiches and bowls of turkey soup can one family eat the week after Thanksgiving? Here are a few meals that make good use of the leftovers but if you just can't face anymore turkey then the best solution is to freeze it for another time. Turkey Casserole
Preheat oven to 350 degrees F. Grease 6 or 8 cup casserole dish. Lay the turkey on the bottom then top with the vegetables and dressing. Pour the gravy or soup over the top. Sprinkle the cheese evenly over the top. Bake at 350 degrees F till bubbly. This is a great recipe to use with any leftovers at all. And you don't have to be particular about the amounts. You can use more or less turkey or vegetables just as long as you have 6 cups of meat/veggies and 2 cups of gravy/soup. Anything is possible with this recipe. Open Face Turkey Sandwiches
Put the turkey, cranberries, sunflower seeds and scallion into a bowl. Add enough mayonnaise to hold all the ingredients together. Toast the bread and butter while warm. Mound the turkey mixture on the toasted slices. Top with alfalfa sprouts. Serve with vegetable sticks and dip. Turkey Bakes
In a bowl mix the flour and baking powder together. Add the mayonnaise and milk and mix. Add the turkey and vegetables. Drop by the 1/3 of a cup onto a non-stick cookie sheet or a greased sheet. Bake at 350 degrees F till golden, about 20 minutes. Serve hot with leftover cranberry sauce and a salad. Baked Turkey Tortilla
Preheat the oven to 350 degrees F. Mix the turkey and the picante sauce together. In another bowl mix the two cheeses together. In a greased casserole dish layer four tortillas to cover the bottom. The tortillas should overlap each other. Spoon half the mixture over the tortillas. Sprinkle 1/3 of the cheese over that and top with another layer of 4 tortillas. Spoon the other half of the mixture on and top with 1/3 of the cheese. Cover with 4 more tortillas. Pop into a 350 degree F. oven and bake for 10 minutes. Sprinkle the rest of the cheese on top. Return to oven and cook for another 10 minutes or until the cheese is bubbling.. Turn off the oven and let sit for 10 minutes. Cut into 4 or six pieces and serve with sour cream on the side.
