Valentine's Day Dinner Heart Shaped Meatloaf

Enjoy This Classic Comfort Food with Your Entire Family

It is not always practical to go out to eat as a couple on Valentine's Day. Why not make this Valentine's Day a family affair with this festive twist on a classic meal.

If going out to a romantic dinner for two this Valentine’s Day is not an option, try including the whole family this year. After all, the day is about expressing your love to the special people in your life and what better way to do so than with a home cooked meal. The saying goes, “the way to a man’s heart is through his stomach.” The same is true with the rest of your family too!

Heart Shaped Meatloaf

In many parts of the country, February is a chilly or down right cold month. Warm up your family’s hearts with this fun take on a “hearty” classic.

Ingredients:

  • 3 lbs 90/10 ground beef
  • 2 cups seasoned breadcrumbs
  • 1 cup low fat milk
  • ¼ cup grated parmesean cheese
  • ¼ cup ketchup or tomato sauce
  • 1 TBS worcestershire sauce
  • 1 TBS parsley
  • 1 large egg
  • ¼ tsp salt
  • pepper to taste

Directions:

  1. Preheat oven to 350°. Mix together all of the ingredients until well combined. Do not over mix the meat.
  2. Spray the bottom of a baking sheet with non stick spray. Shape the meat into a heart shape and coat the top of the meatloaf with tomato sauce until well covered. You can also create mini individual hearts which is always a big hit. You can purchase heart shaped molds or form free hand.
  3. If baking a full sized loaf, cook for 1 hour and 25 minutes or until an internal thermometer inserted in the middle of the meat registers a safe 160°, as per USDA guidelines. If you are cooking individual portions, cooking time will be less, depending upon the size of your loaves. Cover meat loosely with aluminum foil and let sit for 10 minutes.

Festive Valentine’s Day Side Dishes

The festive heart meatloaf stands nicely on its own, but if you are looking to spice things up a little more, these quick and easy sides are perfect.

Heart Shaped Biscuits- for this easy to do side dish, simply use a boxed biscuit mix, such as Bisquick® or, for an even quicker biscuit, a pre made dough found in your grocer’s dairy cooler, such as Pillsbury®. Use a heart shaped cookie cutter to form and bake according to the package instructions.

Mashed Potatoes- while mashed potatoes are not particularly festive when served on their own, they take on a new life when served with pink butter. To make the pink butter, let the butter get to room temperature. Mix the butter until soft, either by hand or with an electric mixer. Adding one drop of red food coloring at a time, blend until you achieve your desired depth of color.

Serve with a vegetable and a festive beverage and you and your family will be sure to have a heart warming Valentine’s Day dinner.
