What to do with Left Over Food.

A good creative cook can make left over food into a feast includes orzo recipe.

It's Boxing Day or New Years Day the day after the party or the big meal and the refrigerator is bursting with left over food. Orzo recipe.

Please read safety tips first:

  • Label all left over food with the date.
  • Store securely, plastic containers with fitted tops are best.
  • Keep all left over meat and eggs for only one day after that either freeze it or throw it out.
  • Never refreeze uncooked meat!
  • Never leave meat out overnight even on cold nights.
  • Rice, potatoes you can keep for two days.
  • Even if it doesn’t smell it can still be bad, don’t take chances.
  • The best way to save left over meat is in a stew or curry or chili and then freeze it.
  • You can keep it in the freezer for about a month if the temperature is steady.
  • Remember: When in doubt throw it out! Don’t take chances with food.
  • Be creative!

Ideas for left over food:

  • Chop it up and put it into – a stew, soup, curry, chili, or fried rice or a stirfry. Here’s a curry recipe for left over turkey.
  • Fried rice dishes are prefect for left over food. Saute onions in a frying pan, add left over rice then chopped meat and any cooking vegetables.
  • Put it in a stir-fry.
  • Fry it up with couscous. Couscous is an amazing fast food that’s made in minutes just over it with hot water or water and put in microwave on high for about one minute.
  • Make a Shepherd’s Pie with left over potatoes and whatever meat, grated zucchini or eggplant or any cooking vegetables recipe is here. Or a Moussaka.
  • Save that potato water.
  • Left over chicken and turkey are great in a salad.

Orzo – is the rice shaped pasta. Its great with left over meat.

  • 1 tablespoon Olive oil
  • 2 cups Orzo
  • About 4 cups soup stock or/and water
  • 2 sprigs Green onions
  • Left over meat.
  • Whatever cooking vegetables you have on hand.
  • Whatever spices you like. Curry is great and so is chili. Don’t forget salt and pepper.

Fry up the orzo on medium heat until they are brown. Add about half the stock or water boil. Add more liquid, turn down heat. Keep cooking until the orzo is tender. (You may need more liquid). Add sliced (I use scissors) green onions. Add chopped or diced meat – any kind. Add diced cooking vegetables and spices. Serve hot.
