Popeye was right! Spinach is good for you. It has iron but not as much as was once believed. It is rich in calcium, vitamin A, C, E. But he was wrong because there are many more and better ways to eat it besides out of a can. I love baby spinach in a salad with finely sliced red onions, beets, strawberries, or sun dried tomatoes. Spinach is also wonderful in lasagna, moussaka, inside a puff pastry or phyllo dough. It's also great in an omelet. Clean it completely, store wrapped in paper towels and a zip lock plastic bag or just use it right away. YOu can also buy it pre-washed. I recommend you buy lots because it reduces considerably when cooked. Interesting fact: Did you know spinach was first cultivated in Persia!
