Dinner for Four

Dinner for friends included homemade buns, potato salad, pasta, tomato sauce, and mushrooms with green beans, asparagus, cheese, and baked spinach omelet.


It was my turn to host the writers group, this time for an early dinner. Adele brought pear cider. Gillean arrived with olives. Nicole came with a light tomato sauce and fried vegetables.

I supplied my own baked dinner rolls, potato salad asparagus, cheese, and baked spinach omelet. This may sound like a lot, but it really isn't. I made the potato salad the night before, using the potato water for the rolls. I made the bread dough that night and raised it in the refrigerator overnight. Just before they came I made the baked spinach omelet. With just a bit of planning, dinner need not take too long.

I find making dinner for friends in some ways more satisfying than for family. They have a greater appreciation for it. We shared not only our food but our writing and friendship.
