You probably walk past them and don't give them a second look but Valencia oranges - the small, cheap kind - are a true kitchen essential. They are in the grocers all year around but this time of year, they shine. They are perfect for juice and squeezing them is worth the effort. Substitute fresh squeezed orange juice in any baking recipe that calls for water and the difference in taste will astound you. Put a bit of real orange juice in a plain cake mix, and everyone will think you made the cake from scratch. It's also the perfect orange for zest. Get a small grater or zester and use the zest in your next chicken dish or any baking - it ups the flavor. So next time don't walk by those little oranges - take them home!
