When most people think of parsley, they think of it as a garnish: this bit of green on top of the meat or fish, or on the side of their plate. It's just something that's there so the dish looks good. Often people forget it's actually food. Finely chopped parsley is wonderful in salads especially Middle Eastern salads with lots of tomatoes and black olives. It's perfect with hummus. Spice up a sauce or soup by adding parsley right at the end. Or just eat it raw, or dipped in lemon water. It tastes as good as it looks.
