This is the scallion - a younger green onion. If you cry when you cut onions, scallions are for you.
I love them in omelets. I cut them with scissors while the eggs are cooking add a bit of cumin and some feta cheese.
Unlike large onions - which you should sauté first - scallions can be added in later to any sauce or fried rice. Add them to baked potatoes along with sour cream. For an instant light soup heat up a soup stock and add scallions for added flavor.
